Crispy "Cat Tongue" Cookies

Ingredients
1 egg
70 grams superfine sugar
70 grams white flour
1 tsp vanilla extract
Instructions
Prepare the Dough:
In a mixing bowl, beat the egg until slightly frothy. Add the vanilla extract, superfine sugar, and flour. Mix everything together until you get a smooth, lump-free batter.
Preheat the Oven:
Heat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
Shape the Cookies:
Using a teaspoon, drop small amounts of the batter onto the prepared baking sheet. Shape each drop into an elongated "tongue" form, leaving some space between each cookie as they will spread during baking.
Bake:
Bake the cookies in the preheated oven until the edges turn golden brown, about 7-10 minutes.
Second Bake:
Lower the oven temperature to 120°C (250°F) and bake for an additional 7 minutes. This will help them achieve that perfect crunchy texture.
Cool:
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
