Eggs with Sautéed Broccolini

Ingredients

  • 2 eggs

  • 1/2 cup broccolini, chopped (you can substitute regular broccoli if needed)

  • 2 tbsp olive oil (or butter)

  • 2 tbsp grated Parmesan cheese (optional)

  • Salt and pepper to taste

  • A pinch of chilli flakes (optional, for some heat)

  • Fresh herbs, like parsley or chives (optional, for garnish)

Instructions

  1. Prep the Broccolini:

    • Trim and chop the broccolini into small bite-sized pieces.

  2. Sauté the Broccolini:

    • Heat 1 tbsp of olive oil in a skillet over medium heat.

    • Add the broccolini and sauté for about 5-7 minutes, stirring occasionally, until tender but still slightly crisp. Season with a pinch of salt and pepper.

    • Once done, remove the sautéed broccolini mixture from the pan and set it aside.

  3. Make the Omelette:

    • In a bowl, whisk the eggs with a pinch of salt and pepper.

    • Heat the remaining 1 tbsp of olive oil in the same skillet over medium heat.

    • Pour the beaten eggs into the skillet, tilting the pan so the eggs spread evenly. Let them cook undisturbed for 1-2 minutes until the edges start to set.

    • Add the sautéed broccolini mixture over the eggs. Sprinkle Parmesan cheese on top (if using).

    • Cook for another 1-2 minutes until the omelette is mostly set but still a little soft in the center.

  4. Serve warm with a side of toast or a light salad. Sprinkle with some red chilli flakes for some heat.
