Eggs with Sautéed Broccolini
Ingredients
2 eggs
1/2 cup broccolini, chopped (you can substitute regular broccoli if needed)
2 tbsp olive oil (or butter)
2 tbsp grated Parmesan cheese (optional)
Salt and pepper to taste
A pinch of chilli flakes (optional, for some heat)
Fresh herbs, like parsley or chives (optional, for garnish)
Instructions
Prep the Broccolini:
Trim and chop the broccolini into small bite-sized pieces.
Sauté the Broccolini:
Heat 1 tbsp of olive oil in a skillet over medium heat.
Add the broccolini and sauté for about 5-7 minutes, stirring occasionally, until tender but still slightly crisp. Season with a pinch of salt and pepper.
Once done, remove the sautéed broccolini mixture from the pan and set it aside.
Make the Omelette:
In a bowl, whisk the eggs with a pinch of salt and pepper.
Heat the remaining 1 tbsp of olive oil in the same skillet over medium heat.
Pour the beaten eggs into the skillet, tilting the pan so the eggs spread evenly. Let them cook undisturbed for 1-2 minutes until the edges start to set.
Add the sautéed broccolini mixture over the eggs. Sprinkle Parmesan cheese on top (if using).
Cook for another 1-2 minutes until the omelette is mostly set but still a little soft in the center.
Serve warm with a side of toast or a light salad. Sprinkle with some red chilli flakes for some heat.
