Protein-almond cookies (Sugar-Free & Gluten-Free)

These 12 cookies are packed with protein and completely sugar-free - a perfect treat for active individuals who enjoy low-carb eating and prioritize their protein intake. Plus, they’re gluten-free! These cookies are great for a quick snack or post-workout boost.

Ingredients:

  • 70 g powdered xylitol

  • 2 eggs

  • 50 g unflavored whey protein isolate, vanilla flavor

  • 70 g almond flour

  • Ceylon cinnamon powder (to taste, optional)

  • A pinch of salt

  • 1 tsp unsweetened cocoa powder

  • Flaked almonds (for decoration)

Instructions:

  1. Mix the Wet Ingredients:

    • In a bowl, combine the eggs, powdered erythritol, and a pinch of salt. Blend the mixture with a hand blender for 4–5 minutes, ensuring the sweetener dissolves completely.

  2. Add Dry Ingredients:

    • Gradually add the whey protein isolate and almond flour to the mixture. Grate in some Ceylon cinnamon and continue blending until you achieve a thick, sticky dough (the consistency comes from the protein powder).

  3. Shape the Cookies:

    • Spoon out half of the mixture onto a baking sheet lined with parchment paper (size: 35x25 cm). Using your fingers, shape the first 6 cookies into rounds.

  4. Prepare the Chocolate Dough:

    • Add the cocoa powder to the remaining dough and mix until fully incorporated. Shape another 6 cookies from this chocolate mixture.

  5. Decorate:

    • Sprinkle the tops of all the cookies with flaked almonds for decoration.

  6. Bake:

    • Preheat the oven to 180°C (350°F) and bake the cookies for 15 minutes.

  7. Cool and Serve:

    • Allow the cookies to cool completely before serving.
