Mekitsa - a classic Bulgarian breakfast

Ingredients

  • About 4 cups flour

  • 1 tsp salt

  • 2 tbsp sugar

  • 1 tbsp dry yeast

  • 2 1/2 cups warm water

Instructions

  1. Prepare the Dough (Night Before): Combine dry ingredients in a large bowl, add warm water, and mix until a thick batter-like dough forms. If the mixture feels too thin, add up to 1/2 cup more flour. Cover with oiled plastic wrap and refrigerate overnight.

  2. Fry the Mekitsi (Morning): Heat plenty of oil in a deep pan. Oil your hands to handle the sticky dough. Take small portions, stretch thinly, and fry until golden. Drain on paper towels and serve warm.
